Se si seguono i consigli di consumo suggeriti dal modello alimentare della dieta mediterranea, l’impatto medio settimanale della carne risulta allineato a quello di altri alimenti, per i quali gli impatti unitari sono minori ma le quantità consumate generalmente maggiori.

Questo è il concetto rappresentato dalla clessidra ambientale, ottenuta dalla moltiplicazione dell’impatto ambientale degli alimenti (il Carbon Footprint) per le quantità settimanali suggerite dalle linee guida nutrizionali INRAN 2003, ora CRA-NUT. Secondo questa rappresentazione, mangiare carne in giusta quantità non comporta un aumento significativo dell’impatto ambientale di un individuo.
